The Shimano 105 R7100 Di2 Disc groupset uses heavier materials in its components. This is reflected in the total weight of the groupset.
Ultegra R8100 Di2 Disc is not the most lightweight groupset, and is heavier than Shimano Dura Ace R9200 Di2 Disc.
The front derailleur shifts less smoothly when the ratio between the front chainrings is different than 13 teeth.
