Because the derailleur is further below the cassette, it's better protected against an impact.
The positioning of the derailleur under the cassette makes it shift more responsively than the previous Shimano 11-speed derailleurs.
The chain makes better contact with the cassette, which means that the derailleur performs better in wet, muddy or sandy conditions.
The bearings of the jockey wheels are better than those in the 105 R7000 rear derailleur.
The clutch prevents the derailleur from rattling and keeps the chain well tensioned.
You can use this derailleur with all 11-speed Shimano shifters.
Cons

If you ride on cobblestones, this derailleur can chatter more. If you want to prevent this, look at the Shimano GRX RX810 11-speed Rear Derailleur.
You cannot fit a cassette with a smaller ratio than 11/30 to this derailleur.
