But with another brand of shifters, like SRAM or Campagnolo, you will not be able to use a Shimano derailleur. This is because each brand uses a different technology in the communication between the shifter and the derailleur. This applies to both the front and rear derailleur.

Should the derailleur be of the same speed as the rest of the groupset?

We can be brief about this, yes. If your groupset is 12 speed, you will need to buy a 12 speed derailleur. If your bike is spec'd with an 11 speed groupset you need an 11 speed derailleur. The same goes for 10 speed derailleurs. This applies to any number of gears.
