Pros
Thanks to the long cage you can use this derailleur for cassettes with up to 32 teeth. Mighty convenient when you're in the mountains!
Being wireless you no longer have to bother with maintenance and internal cables.

Because the derailleur is further below the cassette, it's better protected against an impact.
The positioning of the derailleur under the cassette makes it shift more responsively than the previous Shimano 11-speed derailleurs.
The chain makes better contact with the cassette, which means that the derailleur performs better in wet, muddy or sandy conditions.
The bearings of the jockey wheels are better than those in the 105 R7000 rear derailleur.
This derailleur works on all mechanical 11-speed Shimano shifters.
The long cage derailleur can handle a cassette of up to 34 teeth. Perfect for in the mountains!  
The shifting performance of this derailleur is almost as good as Ultegra.
This derailleur is closer to the cassette and is therefore better protected if you fall.
Cons
You need a cassette with a largest cog of at least 26 teeth, otherwise this derailleur will not shift properly.

If you ride on cobblestones, this derailleur can chatter more. If you want to prevent this, look at the Shimano GRX RX810 11-speed Rear Derailleur.
The derailleur wheels are less flexible and durable than the derailleur wheels of an Ultegra R8000 or Dura-Ace R9100 derailleur.
This derailleur can flap more than Shimano 11-speed derailleurs from a higher price segment, because the spring tension is lower.
