According to the product specialist

Pros
-
The Shimano G05S-RX Resin brake pads have better heat dissipation and more durability compared to the G03S mtb brake pads.
These brake pads are also easier to modulate and have increased braking power compared to the G03S.
Organic (Resin) brake pads are less noisy and better suited for flat to undulating tracks.
These brake pads are very resistant to heat generated by long descents.
These brake pads are very wear resistant.
The aluminium back plate ensures that heat is dissipated very well.
These brake pads are very durable due to the surface with many metal particles.
Because of the aluminium back plate these brake pads are nice and light.
Cons
-
Less able to withstand the higher temperatures that may occur when you're braking during long descents (in the mountains), for example.
Sintered brake pads have a slower engagement than organic brake pads.
These pads make more noise during braking than pads with a softer compound.
The engagement of these brake pads is lower than with semi-metal and organic brake pads.
