Which type of grease should I use and when?
Assembly grease is not transparent as it contains small ceramic particles. This is what keeps the screw tight and what ensures it'll loosen again eventually. Carbon grease is for carbon, which is more vulnerable to over-tightening. The carbon paste ensures that your parts remain securely tightened, even with low tightening torques. There is also grease that is specifically intended for rotating parts and acts as a sealant against water and dirt. You can use this to mount your parts as well, but it does not provide extra grip like the assembly grease and carbon paste.
How to use assembly grease
Assembly grease is applied to the part being assembled and to the threads of bolts. You can apply it with a brush, straight from the tube or with your fingers. Basically, you use grease on all threaded bolts. You should also apply assembly grease to the following parts: saddle, stem, pedals, thru axle. You use the assembly grease when you have removed a component. It is also advisable to loosen or remove parts once in a while, so that you can check them, clean them and apply fresh assembly grease to them.
